摘　　要：采用离心搜集菌体、超声波破壁、超滤及固相萃取提纯、HPLC-MS-Biolynx对比等方法和技术,建立了一种分离、纯化及鉴定瑞士乳酸菌胞内肽的方法。使用该方法分离鉴定发酵乳中瑞士乳杆菌胞内肽共20条,其中12条是本研究中新发现的多肽,说明本研究方法完整有效、切实可行,适用于胞内生物活性物质的分离鉴定。This research establishes a method to isolate, purify and identify intracellular peptides method from Lactobacillus helveticus. 20 peptides from milk proteins are identified by centrifugation, ultrasonic-broking, ultrafiltration, solid phase extraction, simulated gastrointestinal digestion and HPLC-MS-Biolynx identification, including 12 reported bioactive peptides. This complete and effective method can be used for identifying intracellular bioactive substance in other matrices.
