摘 要:采用食品安全国家标准中相关测定方法对贵州喀斯特山区野生榛子18个样品,东北铁岭3个样品中营养成分进行测定。结果表明:喀斯特山区野生榛子总碳水化合物含量为16.5%~24.5%、水分含量为3.97%~5.12%、维生素A含量为0.023 3~0.038 0mg·hg^(-1),显著高于东北铁岭野生榛子;喀斯特山区野生榛子的能量含量为2 532.5~2 679.6kJ·hg^(-1)、灰分的含量为2.49%~3.24%、蛋白质的含量为18.7%~20.7%、脂肪含量为48.8%~54.9%,显著低于东北铁岭野生榛子;喀斯特山区野生榛仁维生素E含量为3.61~7.82mg·hg^(-1)。对21个野生榛子的8个指标进行聚类分析发现,第Ⅱ组的野生榛子(喀斯特山区野生榛子的7、8、9、16、17、18号品系)的维生素A的平均值最高,且蛋白质的含量也较高,可以作为今后喀斯特山区野生榛子重点开发、推广的对象。Nutritional compositions of 18 wild hazelnuts from the karst mountains in Guizhou and 3from Tieling in Northeast China were determined using the national food safety standard methods.The wild hazelnuts from Guizhou contained 16.5%-24.5% of total carbohydrates,3.97%-5.12% of water,and 0.023 3-0.038 0mg·hg^-1 of vitamin A,which were significantly higher than those in their counterparts from Tieling.The wild hazelnuts from Guizhou contained 2 532.5-2 679.6KJ·hg^-1 of energy,2.49%-3.24% of ash,18.7%-20.7% of protein,and48.8-54.9% of fat,which were significantly lower than those of the varieties from Tieling.The content of vitamin E in the hazelnuts from Guizhou was 3.61-7.82 mg·hg^-1.A dendrogram from the cluster analysis on all 21 hazelnut varieties indicated that GroupⅡwild hazelnuts(i.e.,No.7,8,9,16,17,and 18)from Guizhou had the highest average contents of vitamin A and protein.The information could be used for marketing the product.
