摘 要:以褐藻酸钠裂解酶降解海带,震荡培养24 h后,抽滤获得酶解产物海带泥,并将未降解的海带经冻干粉碎后作为对照进行基本营养成分、氨基酸及矿质元素分析。结果表明,海带中主要成分为多糖类,在降解过程中,海带多糖被降解成海带寡糖溶于水中。对相同质量的海带及降解后海带成分进行分析发现,海带泥中总糖含量降低了31.55%,蛋白质含量升高了5%,粗脂肪、粗纤维和灰分含量分别增加了109.63%、82.14%和114.37%,氨基酸组成均衡,矿物质中K、Mg和Fe含量显著增高、有毒金属Pb含量甚微。实验结果表明,酶解后的海带,营养成分更加均衡,各组分含量相对增加,作为饲料时更有利于动物对营养物质的吸收,是一种低污染、高膳食纤维、富含矿物质的海洋食品。The Laminaria japonica was degraded by Sodium alginate lyase after shake culture for 24 hours,the paste,enzymatic hydrolysate,was obtained by suction filtration,and their basis nutritional components,AA and mineral elements were analyzed using the undegraded grind frozen Laminaria japonica as the control group. The results showed that polysaccharide was the main ingredient in Laminaria japonica,it was degraded to soluble oligosaccharides into water. The analysis results indicated that the total sugar content of the paste was reduced by 31.55%,the protein content was increased by 5%,the crude fat,crude fiber and ash content was significantly increased by 109.63%,82.14% and 109.63% respectively. The amino acid composition of Laminaria japonica was even and K,Mg and Fe content was increased significantly,at the same time,Pb,the poison metal was very little. The results showed that the nutritional components of Laminaria japonica after enzymolysis were more even,the their contents relatively increased.As feed,it was helpful for animals to absorb and was a marine food with low pollution,high fiber,and rich in minerals.
