摘　　要：砷是食品中常规卫生监测指标。文章综述了食品中砷含量测定方法的研究进展，包括原子荧光光度法、原子荧光吸收光度法、电感耦合等离子体质谱法，对以上技术的检测对像、结果进行分析。In food detection , Arsenic is an important progress of arsenic in food is reviewed , including Atomic AAS ）. Inductively Coupled Plasma Mass Spectrometry （ ICP index to judge whether the food is hygiene .
