摘  要:对9个典型清香型烤烟产地间的致香物质含量进行差异分析,旨在为清香型烟叶风格形成机理的进一步研究奠定基础。结果表明,9个烟区虽同属典型清香型烤烟产地,但烟叶中各类致香物质含量存在差异,云南昆明烟区新植二烯含量较高,四川省凉山州酮类和醇类致香物质含量较高,云南省红河州醛类和杂环类致香物质含量较高,福建龙岩市酮类和酯类物质含量较高,各烟区烤烟优势致香物质不同,但致香物质总量在各烟区间差异较小。可见,不同类致香物质之间具有香气互补作用,且致香物质总量及新植二烯与各类致香物质的比值对烟叶香型风格形成影响较大,从而使致香物质含量存在差异但不影响其香型风格。Analysis of flavor content in flue-cured tobacco from 9 growing areas typical of light flavor was conducted to study forming mechanism of flavored leaf tobacco.Results showed that difference was identified in flavor contents of leaf tobacco in the nine growing areas.Neophytadiene was higher in Kuming of Yunnan;ketones and acids were higher in Liangshanzhou of Sichuan;aldehyde and heterocyclic were higher in Honghe of Yunnan,and ketones,lipids and acids were higher in Longyan of Fujian.Components contributing to flavor in these nine areas are different,while the total amount in each area varied slightly.Different types of flavor components complement each other and total content of flavor substance and the ratio of neophytadiene to flavor substance had great effect on the formation of tobacco flavor type.This complementary effect leads to content difference in flavor substance but doesn’t affect overall flavor type.
