摘  要:试验选取15 kg左右的"杜长大"断奶仔猪96头,随机分为对照组、抗生素组、中药Ⅰ组和中药Ⅱ组,每组3个重复,每个重复8头,验证超微粉中药添加剂改善猪肉品质配方的筛选结果。结果表明,从肉色来看,中药Ⅰ组L值、b值最低,a值较高,整体肉色好;中药Ⅱ组次之;抗生素组最差。从氨基酸含量来看,中药Ⅰ组和中药Ⅱ组的呈味氨基酸含量、必需氨基酸含量显著高于对照组(P<0.05),极显著高于抗生素组(P<0.01),其中中药Ⅱ组更加明显。从脂肪酸来看,不饱和脂肪酸中药Ⅱ组与中药Ⅰ组相比差异显著(P<0.05),与对照组、抗生素组相比差异极显著(P<0.01);共轭亚油酸中药Ⅱ组显著高于对照组、抗生素组(P<0.05);肌内脂肪含量中药组显著高于对照组和抗生素组,中药Ⅱ组略高于中药Ⅰ组,但差异不显著;胆固醇含量中药组显著低于抗生素组(P<0.05),极显著低于对照组(P<0.01),中药Ⅰ组略低于中药Ⅱ组,但差异不显著。结果显示,中药Ⅱ组对于猪肉品质改善方面最好,与以前的试验结果一致。To testify the prescription screening experiment result of ultra fine powder Chinese medicine additive in improving pork quality, the paper selected 96 "Du Changda" weaning piglets weighted around 15 kg, and randomly divided into control group, antibiotic group, Chinese medicine group I and Chinese medicine group II, every group contained 3 repeats, and every repeat had 8 piglets. The result showed that from the flesh color seeing, L value and b value were the lowest in Chinese medicine group I, but a value was high, and flesh color was better; Chinese medicine group II took the 2nd place and antibiotic group was the worst. From the amino acid content seeing, delicious amino acid content and essential amino acid of Chinese medicine group I and group II was significantly higher than control group(P〈0.05), and extremely significantly higher than antibiotic group(P〈0.01). From fatty acid seeing, unsaturated fatty acid in Chinese medicine group II was significantly different than in Chinese medicine group I(P〈0.05), and also significantly different with control group and antibiotic group(P〈0.01). Conjugated Linoleic Acid(CLA)in Chinese medicine group II was significantly higher than control group and antibiotic group(P〈0.05). CLA in Chinese medicine group II was significantly higher than Chinese medicine group I(P〈0.05). Intramuscular fat content(IMF)of Chinese medicine group was significantly higher than control group and antibiotic group(P〈0.05); and Chinese medicine group II was slightly higher than Chinese medicine group I, but the difference was no significant(P〉 0.05). Cholesterol content in Chinese medicine group was significantly higher than control group(P 0.05)and extremely significantly higher than antibiotic group(P〈0.01). Chinese medicine group I was slightly better than Chinese medicine group II, but had no significance(P〈0.05).
