摘　　要：猴头菇具有较高的食用和药用价值,子实体口味鲜美,其多糖具有抗肿瘤、降血脂、抗衰老,提高免疫力等生理功能。本文论述了猴头菇的药理功能和营养价值、多糖的提取与纯化、人工栽培技术及其市场应用开发等,并对不足之处进行了探讨和展望。目前猴头菇价格高居不下且药用功效普及度不高,应大力开发并倡导消费。The Hericium erinaceus is of higher food and medical value, whose fruiting body tastes delicious. The polysaccharide has the anti-tumor, reducing blood fat, anti-aging, enhance immunity and other physiological functions. The cultivation, nutritional value and application of Hericium erinaceus cultivation, nutritional value and application were discussed in this paper. The advantages and disadvantages of Hericium erinaceus utilization were discussed in this paper. So did it with the future direction for the development and utilization of Hericium erinaceus in China. The price of Hericium erinaceus is high. However, its medicinal efficacy popularity is low. We should vigorously develop and promote its consumption.
