摘  要:以夏秋季都匀毛尖为原料,利用纤维素酶和果胶酶辅助提取低档毛尖茶中总黄酮。研究酶用量、提取温度、料液比、提取时间、酶解p H 5个因素对总黄酮提取率的影响。在单因素基础上,筛选出影响总黄酮提取率显著的因素;并结合Box-behnken中心组合试验设计原理进行响应面法回归分析,最终确定酶解工艺条件为酶用量100μL、酶解p H值5.60、料液比1∶90g/m L、提取温度55℃、提取时间68min,总黄酮提取率为4.07%。结果表明,所得模型方程能较好的预测实验结果,拟合度较好。The technology of extracting flavonoids from summer and autumn low- grade Duyun Maojian is studied with the help of cellulase and pectinase. The influences of enzyme loading,extraction temperature,liquid to solid ratio,extraction time and p H are investigated on the extraction rate. On the basis of single factor test,Box- Behnken design is adopted to screen crucial factors during the extraction rate of total flavonoids as well as the optimization of experimental conditions. The optimum extraction parameters are as follows: the enzyme loading is 100 μL; the extraction time is 68 minutes; the extraction temperature is 55℃; the ratio of solid liquid is 1: 90 g / m L and the value of p H is 5. 60. The extraction rate of flavonoids is 4. 07%,which shows that statistical method is a useful tool for the experiment results with high degree of fitting.
