摘 要:以梅州平远脐橙为材料,按果实直径分为大果(﹥9.8cm)、中果(7.7-9.8cm)和小果(﹤7.7cm)3个级别,研究室温下果实采后不同时间内,果实大小对可食率、果汁率和品质指标的影响.结果表明:脐橙果实的大小对其贮藏品质具有较大的影响.在0-60d贮藏期内,果汁率和果酸含量均呈下降的趋势,60-120d果汁率又上升,但果酸始终下降;可食率、可溶性固形物含量和VC含量的变化均呈先升后降的趋势,且60d是贮藏品质的一个临界点.综合而言,中果脐橙的贮藏品质和营养价值较大果和小果好。Fruits of Citrus sinensis which were produced in Pingyuan county,Meizhou city were divided into 3 size grades according to their diameter namely large size( ﹥ 9. 8cm),medium size( 7. 7 - 9. 8cm) and small size( ﹤ 7.7cm),and the correlations between the fruit size and edible percentage,juice rate and quality traits at different time of storage were investigated. Results indicated that fruit size had significant impact on the storage quality of Citrus sinensis. During the storage period of 0 - 60 d,the juice rate demonstrated a declining trend but rose again during 60 - 120 d,and fruit acid content declined all through the storage period of,0 - 120d; the edible percentage,soluble solid content and vitamin C content all demonstrated a trend of rising first and then declining after the critical date of 60 d. It was concluded that the medium sized fruit of Citrus sinensis had higher storage quality than large seized and small sized fruits and hence with higher nutritional value.
