摘　　要：在介绍食品挤压膨化设备的类型、原理和特点的基础上,重点对植物复合粉体膨化食品的研究进展进行了综述,并对植物复合粉体在挤压膨化食品中的发展前景进行了展望.Type, the priniciple and characteristics of the extruding puffed food equipment were intro- duced. The research progress on puffed food made from plant compound powder was reviewed. The development prospects of plant compound powder in extrusion food was discussed.
