摘  要:运用傅里叶变换红外光谱(FTIR)技术,采集50多种婴幼儿奶粉样品的红外谱图,对奶粉中蛋白质、脂肪、糖类等主要营养成分进行分析。婴幼儿奶粉的红外谱图中,蛋白质的特征峰在1 657 cm^(-1)和1 543 cm^(-1)左右处,脂肪的特征峰在2 926 cm^(-1)和1 747 cm^(-1)左右处,糖类的特征峰在1 200~900 cm^(-1)处,含量不同时对应吸收峰的强度存在差异。结果表明,同一品牌不同阶段婴幼儿奶粉中各营养物质的吸收峰强度差异明显,即质量分数差别较为明显,可直接通过红外谱图区分;而不同品牌相同阶段婴幼儿奶粉中各营养物质的质量分数差别不太明显,但二阶导数谱图差异较为显著,可间接区分。可见,FTIR技术可方便快捷地对婴幼儿奶粉品质进行检测。Collected about 50 kinds of infant powdered milk samples,using Fourier transform infrared spectroscopy(FTIR) technique,ob- tained for the infrared spectra of each samples and comparing the main nutritional components of proteins,fats, carbohydrates in the infrared spectra of samples of infant powdered milk.it is a way to measure the quality of milk powder.In the infrared spectra of infant powdered milk, the peaks of proteinat at 1 657 cm-1 and 1 543 cm-l,the peaks of fat at 2 926 cm-1 and 1 747 cm-l,the peaks of carbohydrates at 1 200 cm-1 900 cm-1.The content of each nutrientin of the infant powdered milk of the different stages of the same brands have obvious difference and distinguished by infrared spectra.But the difference of the content of the infant powdered milk of the different brands of the same stages in various nutrients less obvious,required by its infrared spectra into the second derivative spectra.Obviously, FTIR. technique is very convenient to detection the quality of infant powdered milk.
