摘  要:以乌饭树树叶为试验原料,并提取树叶中的黑色素,通过测定黑色素的还原力和总抗氧化能力、对DPPH·的清除试验来研究乌饭树树叶黑色素的抗氧化性.试验结果表明,乌饭树树叶黑色素具有较好的抗氧化能力,在所选的浓度范围内,乌饭树树叶黑色素溶液与维生素C溶液对比,还原能力是维生素C溶液的两倍,总抗氧化能力强于维生素C溶液,乌饭树树叶黑色素对DPPH·的清除率达到68.83%强于维生素C溶液对DPPH·的清除率43.42%.此外,乌饭树树叶黑色素对蛋白质和淀粉都有良好的着色效果.The experiment uses Vaccinium bracteatum leaves as testing material to extract melanin from the leaves. The goal of this experiment is to study the antioxidant activity of melanin through reducing power and scavenging of DPPH· capacity. A preliminary coloring research will be performed by coloring glutinous rice experiment, starch coloring test and coloring egg protein. The results indicate that melanin from Vaccinium bracteatum leaves have good resistance to oxidation and the antioxidant capacity is related to their concentration. Within the selected concentration range, by comparing melanin solution with VC solution, the reducing capacity of melanin from the Vaccinium bracteatum leaves is two times of VC solution and the antioxidant ability is stronger than VC solution, and the DPPH· scavenging rate of 68.83% in melanin is stronger than DPPH· scavenging rate of 43.42% in VC solution as well. In addition, the melanin from Vaccinium bracteatum leave has better coloring effect on protein and starch.
