摘　　要：随着人们对健康的日益重视,各种安全健康的甜味剂引起越来越多学者和消费者的关注。D-阿洛酮糖是一种新型安全的功能性甜味剂,其相当于蔗糖甜度的70%,却仅提供相当于蔗糖0.3%的热量,且无任何副作用。文章综合讨论了D-阿洛酮糖的安全性和功能性,同时结合国内外研究进展,总结了目前国内外对D-阿洛酮糖合成研究的成果与面临的问题,并分析了D-阿洛酮糖在我国良好的发展前景。With the increasing attention on health, more and more people focused on the safety and health of sweeteners. D-psicose is a new functional sweetener which is 70 % sweet as sucrose but only provides 0.3 % calories comparing to sucrose. Besides, it has no any side effects. The safety and functional property of D-psicose were discussed in this paper. Also, the achievements and problems of D-psicose production were concluded according to the development at home and abroad. In general, D-psicose has good prospects in China.
