摘 要:教育教学质量的提高关键在于教育教学管理.而任何有效的管理都是建立在对所管理的客观事实的结构和变化过程有着深刻了解的基础之上.文章通过对本科《食品科学与工程》专业属性及专业知识结构层次地分析归纳,勾勒出了食品科学与工程专业专业教育认知体系的基本框架.明确了区域优势下本科专业建设所要解决得问题.分析了专业教育认知体系中所包含知识链的组成及层次.据此阐述了本科专业建设的本质是为学生专业学习提供完备、优异、高效地专业教育认知体系的建设思想.分析了专业建设中存在的问题和成因,并提出了相应得改进措施.The key to improve the quality of education and teaching lies in education and teaching management.All effective management set base on a deep understanding of the object's internal structure and changing pattern.Only with the understading of the internal structure and changing pattern of the target,can the scientific and efficient management be implemented.Therefore,whether for the national education system,or for the organization and management of colleges and universities,understanding the basic structure of regular undergraduate courses,level of knowledge and the educational process has become an important basis for the implementation of undergraduate teaching management.Through the analyze and summarize of the major attributes and major knowledge level of undergraduate course Food Science and Engineering,this article sketched out the basic framework of Food Science and Engineering professional education cognitive system.This article also defined problems lies in the undergraduate major establishment which need to be solved under regional advantages.At the same time,this article proposed the concept of knowledge chain and analyzed the composition and level of knowledge chain which contained inthe professional education construction is to provide undergraduate students with a comprehensive,excellent and efficient professional education cognitive system.It analyzed the existing problems of major construction and causes of them,and proposed the corresponding improvement measures which means significantly in enhancing teaching management,improving the quality of teaching and improving teaching evaluation.
