摘  要:为研究金针菇菌渣提取液对双孢蘑菇子实体蛋白质营养价值的影响,采用常温浸提和加热浸提2种方式制备金针菇菌渣提取液(分别记为RDT和HDT)处理双孢蘑菇覆土,并设清水对照,检测双孢蘑菇子实体的蛋白质含量及氨基酸组成,利用国际上通用的蛋白质营养评价方法对双孢蘑菇子实体蛋白质营养价值进行比较。结果表明:RDT处理的双孢蘑菇子实体的氨基酸评分(AAS)、化学评分(CS)、必需氨基酸比值系数分(SCRAA)、必需氨基酸指数(EAAI)、生物价(BV)和营养指数(NI)均高于对照;HDT处理的双孢蘑菇子实体的各项指数除化学评分(CS)外也均高于对照,说明金针菇菌渣提取液处理的双孢蘑菇子实体的营养价值高于对照。因此,双孢蘑菇生长过程中喷施金针菇菌渣提取液,有利于子实体蛋白质营养成分的积累,提高营养价值。The study was carried out to reveal the effects of Flammulina velutipes residue extracts on protein nutritional value of Agaricus bisporus,by treating casing soil with two extracts which were prepared in the conditions of heating and room temperature respectively( HDT and RDT) and tap water as a control.The protein and amino acids components of the fruiting bodies were tested to compare the nutrition value of protein with the international adopted assessment method. The results showed that the amino acid score( AAS),chemical score( CS),score of ratio coefficient of essential anino acid( SRCAA),essential amino acid index( EAAI),biological value( BV) and nutritional index( NI) of the RDT-treated fruiting bodies were higher than the control and all the indexes of the HDT-treated fruiting bodies were higher than the control except CS,indicating that the fruiting bodies of Agaricus bisporus treated with the Flammulina velutipes residue extracts had higher nutrition value. As a result,it was advantageous for the fruiting body to accumulate protein nutrient and raise nutrition value that Flammulina velutipes residue extracts were used in the process of Agaricus bisporus production.
