老字号企业发展的影响因素分析——基于四家广州餐饮业老字号的考察

摘　　要：中国企业并非都是"短命"企业,广州酒家、莲香楼、陶陶居和成珠楼等四家广州餐饮业老字号就是"长寿"中国企业的典型代表。文章以这四家老字号企业为例,从历史学的视角考察了影响老字号企业发展的外部因素,主要包括文化因素、社会因素和政治因素;从企业人类学的视角考察了影响老字号企业发展的内部因素,主要包括企业的核心能力和系统运作能力。促进老字号企业的发展,需要政府和社会各界的支持及老字号自身的努力。Chinese enterprises are not all short -lived. The restaurants in Guangzhou, such as Guangzhou Restaurant, Lianxianglou, Taotaoju and Chengzhulou are typical cases of time -honored brands in China. From the perspective of history, this paper examines the external factors that affect the development of these four famous enterprises, mainly focusing on cultural, social and political aspects. Meanwhile, this paper examines the internal factors that affect the development of these four old enterprises from the perspective of enterprise anthropology, which mainly focuses on the core competence and the operational capabilities of the system. In order to promote the development of time -honored enterprises, support from government and all circles of society as well as the effort of the time-honored enterprise itself should be needed.
