摘 要:对食用菌菌包微波灭菌条件进行试验研究,探讨了灭菌过程中微波功率、传输速度等技术条件对灭菌效果的影响,通过试验提出了合理的微波灭菌条件。结果表明,微波功率148 k W、传输速度260 r·min^(-1)、通过微波辐射(频率2 450 Hz)16 min、物料含水率为62%、p H 6.2是目前菌包微波灭菌的最佳条件。该条件使菌包微波灭菌技术实现低成本、低功耗、无污染、高效率的技术要求。The mierowave sterilization conditions of spawned bag for edible fungus were studied, the influence of microwave power, transmission speed and other technical conditions on the sterilization effect were explored, and the reasonable eoudilions of microwave sterilization were proposed the by test. The results showed that it used power of 148 kW and spewed of 260 r·min-1 hy micro wave radiation (frequency was 2 450 Hz) 16 min, the moisture content of the material rate of 62%, pH value of 6.2, which was the optimum conditions of microwave sterilization for the edible tungus spawned bag. These optimum conditions improved microwave sterilization technology for edible fimgus spawned bag to realize the technical rcquirements of low cost, low power consumption, no pollution, high efficiency.
