摘　　要：枸杞色素是枸杞主要活性成分之一,也是一种天然着色剂,在医药和食品行业有广阔应用前景。主要综述了枸杞色素的性质和提取方法,提出研究中存在的主要问题和建议。Pigment is one of the main active ingredients of lycium. Pigment from lycium is also a natural colorant. It has broad application prospects in pharmaceutical industry and food industry. This paper reviewed the characteristics and extraction methods of pigment from lycium, and then presented the main problems and advice in the research.
