摘  要:为探究制丝线加料工序对叶丝感官质量有影响的主要化学指标,对总糖、还原糖、烟碱、钾、氯、总氮、糖碱比、氮碱比、和钾氯比与感官质量进行了灰色关联分析。结果表明:还原糖与感官质量的关联最紧密,关联度为0.8994;糖碱比次之,关联度为0.8361;烟碱居于第三,关联度为0.8004;其他指标关联度大小依次为总糖、钾、氯、钾氯比、氮碱比、总氮,关联度分别为0.7169、0.6988、0.6679、0.6174、0.6017、0.5952。因此,可将还原糖、糖碱比和烟碱作为评价制丝线加料工序叶丝质量的重要化学指标。In order to explore the main chemical indexes which affect the sensory quality of cigarette silk in casing process,we analyzed the grey correlations between sensory quality and total sugar,reducing sugar,nicotine,potassium,chlorine,total nitrogen,sugar-nicotine ratio,nitrogen- nicotine ratio,potassium- chloride ratio. The results showed that reducing sugar had the closest correlation with sensory quality,and the correlation degree was 0.8994; sugar-nicotine ratio had the second closest correlation with sensory quality,and the correlation degree was 0. 8361. The correlation degree between sensory quality and nicotine,total sugar,potassium,chlorine,potassium-chloride ratio,nitrogen-nicotine ratio,total nitrogen was 0.8004,0.7169,0.6988,0.6679,0.6174,0.6017,0.5952,respectively. Therefore,reducing sugar,sugar- nicotine ratio and nicotine could be used as the main chemical indexes for the evaluation of cigarette silk quality in casing process.
