摘  要:以鲜切南瓜为实验材料,研究了外源信号分子水杨酸(SA)、硫化氢(H2S)对鲜切南瓜苯丙烷代谢的影响。结果表明,外源SA、H_2S可有效提高鲜切南瓜的苯丙烷解氨酶(PAL)活性、过氧化物酶(POD)活性,降低多酚氧化酶(PPO)活性,并且,具有促进鲜切南瓜组织中总酚、类黄酮、木质素等次生代谢产物合成的作用。结果得出,外源SA、H2S作为外界信号分子可诱导并激活苯丙烷代谢途径的启动,合成用来修复伤口的组织成分和增加抗性的多酚类化合物,提高保鲜效果。H_2S对鲜切南瓜苯丙烷代谢的影响优于SA。The effects of exogenous salicylic acid(SA) and hydrogen sulfides(H_2S) on benzene propane metabolism of fresh-cut pumpkin were studied. The results showed that exogenous SA and H_2S treatment increased activity of phenylalanin ammonia-lyase(PAL), polyphenol oxidase(PPO), and reduced peroxidase(POD) activity of fresh-cut pumpkin, and also enhanced the content of total phenol, flavonoids and lignin. It was considered that exogenous SA and H_2S could be used as signal molecule to induce the synthesis of polyphenol of benzene propane metabolic pathway to enhance the repair ability by itself and the resistance, improve the preservation effect of fresh-cut pumpkin. The effect of H2 S on the metabolism of fresh-cut pumpkin was better than that of SA.
