摘 要:目的:考察蒸制温度、蒸制时间对补益类药生成5-羟甲基糠醛(5-HMF)的影响。方法:利用顶空气相色谱-质谱法(HS-GC-MS)检测其生成的5-HMF。结果:不同类补益药蒸制都会生成5-HMF,蒸制温度、蒸制时间在补益类药生成5-HMF过程中均有重要影响。蒸制温度不超过80℃,补益类药蒸制几乎不生成5-HMF,蒸制时间对5-HMF生成亦没有明显影响;但蒸制温度超过80℃,蒸制温度及蒸制时间对5-HMF生成的影响则明显不同。80℃﹤蒸制温度﹤130℃时,补益类药蒸制产生5-HMF的量呈平稳较快增长。当蒸制温度>140℃时,补益类药蒸制生成5-HMF的量呈显著变化,蒸制温度为140℃时,5-HMF生成量较100℃时增加多达10余倍。在蒸制温度超过180℃时,补益类药蒸制随温度的升高5-HMF生成量则逐渐降低,且蒸制时间越长,5-HMF的生成量相应越少。结论:补益类中药材蒸制过程中需严格控制温度和时间。Objective: To investigate the influence of steaming temperature and steaming time on the formation of 5-hydroxymethyl- furfural (5-HMF) in the steaming process of tonic herbs. Methods: HS-GC-MS was used to determine the level of 5-HMF in the steaming process. Results: 5-HMF could be formed in the steaming process of different tonic herbs, and the steaming temperature and the steaming time affected the formation of 5-HMF significantly. When the temperature was lower than 80℃, 5-HMF could not be formed during the steaming process, and the steaming time showed no effect on the results. When the temperature was higher than 80℃, the steaming temperature and the steaming time affected the formation of 5-HMF in varying degrees. When the steaming temper- ature was between 80℃ and 130℃, the quantity of 5-HMF was increased quickly and steadily as the heating processing lasted. When the steaming temperature was above 140℃, the formation of 5-HMF was significantly changed. As the steaming temperature reached 140℃, the quantity of 5-HMF was more than 10 times of that formed at the temperature of 100℃. When the temperature was above 180℃, the quantity of 5-HMF decreased gradually as the steaming time lasted. Conclusion: In the steaming process of tonic herbs, steaming temperature and steaming tine should be controlled strictly.
