摘 要:试验以椰子粉为原料,在不同温度(-20-200℃)处理1 h后导致脂肪氧化,由乙醚萃取、蒸馏得到不同氧化程度的椰子油,文章基于椰子油的红外光谱特征快速检测椰子油的氧化指标.利用偏最小二乘(PLS)回归方法分别对椰子油的红外光谱数据与实测椰子油的酸值、碘值、过氧化物值进行建模,并交叉验证和预测.结果显示:酸值、碘值、过氧化物值的交叉模型相关系数(R)分别为0.69、0.86、0.95,预测模型相关系数分别为0.60、0.88、0.93.其中,过氧化物值的预测值和实测值比较接近,模型良好,表明红外光谱法快速测定椰子油中过氧化物值是可行的.Coconut powder was used as raw material and oxidized by different temperatures(-20~200 ℃)for 1h, then coconut oil was extracted by ether and distilled. The spectral data were obtained by scanning the coconut oil with infrared spectroscopy, and the acid value, iodine value and peroxide value of coconut oil were measured and respectively related to the spectral data by PLS regression method. The experimental results indicated that the correlation coefficient R of the PLS model related with acid value, iodine value, peroxide value are 0.69, 0.86 and 0.95 respectively, coefficient R of prediction model are 0.72、0.88、0.93 and the predicted peroxide value were in good agreement with the measured results. In conclusion, it is possible that infrared spectroscopy can be used for the rapid determination of peroxide value of coconut oil.
