摘  要:目的:探究蜈蚣粉发酵前后水溶性活性物质含量差异。方法:通过水提法对发酵前后蜈蚣粉进行水溶性活性物质的提取,分别采用苯酚-硫酸法、定磷法、福林酚法对总糖、总核酸、总蛋白进行含量的测定,并比较蜈蚣粉发酵前后水溶性活性物质含量的差异。结果:通过对蜈蚣粉发酵前后水溶性活性物质含量测定,得出发酵前每克样品中总糖含量为5.7807mg、总核酸含量为14.8141mg、总蛋白含量为90.9678mg,发酵后每克样品中总糖含量为19.8494mg、总核酸含量为50.3089mg、总蛋白含量为101.7339mg。结论:蜈蚣粉发酵后总糖、总核酸和总蛋白含量,均大于发酵前总含量。Objective: To investigate the content of water-soluble active substances in centipede powder before and after fermentation. Methods: Water extraction was performed to obtain water-soluble active substances in centipede powder before and after fermentation,and the phenol-sulfuric acid method,phosphorus quantification,and Folin-Ciocalteu assay were used to determine the content of total sugar,total nucleic acid,and total protein. The content of water-soluble active substances in centipede powder was compared before and after fermentation. Results: The content determination of water-soluble active substances in centipede powder before and after fermentation showed that the content of total sugar,total nucleic acid,and total protein per gram was 5. 7807 mg,14. 8141 mg,and 90. 9678 mg,respectively,before fermentation and 19. 8494 mg,50. 3089 mg,and 101. 7339 mg,respectively,after fermentation. Conclusion: There are increases in the content of total sugar,total nucleic acid,and total protein in centipede powder after fermentation.
