摘  要:本研究采用生化方法对金乌贼胚胎发育过程中的粗蛋白、粗脂肪、灰分、氨基酸、脂肪酸、常量及微量元素等主要生化成分含量进行了测定和分析。结果显示,水分总体呈先下降后上升的变化趋势,而粗蛋白、粗脂肪、灰分和总糖含量呈先上升后下降的变化趋势;粗蛋白、粗脂肪和总糖的利用率分别为66.20%、66.67%和36.08%,总能消耗为0.91kJ/g,其中粗蛋白供能为0.79kJ/g,为能量的主要来源;总氨基酸、必需氨基酸、半必需氨基酸和非必需氨基酸含量总体均呈先上升后下降的变化趋势,利用率分别为18.48%、19.08%、16.77%和18.24%。饱和脂肪酸含量总体变化不大,利用率为7.86%,主要是由于C14:0和C16:0下降所致;单不饱和脂肪酸含量总体呈下降趋势,利用率为33.02%,主要是由于C20:1(n-7)下降所致;而多不饱和脂肪酸含量总体呈上升的变化趋势,含量上升9.35%,主要由于EPA和DHA含量上升所致。矿物质中P和Cu元素含量总体呈上升趋势,其余元素含量变化不大,其中Fe和Se利用率较高,分别为45.16%和33.33%,但Ca和Cu的含量在出膜期却明显上升,上升比例分别为68.3%和24.19%。Golden cuttlefish(Sepia esculenta Hoyle)was one of the four traditional major fisheries in China,but in recent years,their natural resources have become increasingly exhausted.In this paper,the changes of the content of main biochemical composition such as crude protein,crude lipid,ash,amino acids,fatty acids,major and trace elements during embryonic development stage of Sepia esculenta was determined and analyzed by chemical and biological methods.The results indicated that the content of water was declined firstly and elevated later,but the tendency of the contents of crude protein,crude fat,ash and total sugar was in the opposite,that was elevated firstly and declined later.The utilization rate of crude protein,crude fat and total sugar was 66.20%,66.67%and 36.08%,respectively,the total energy expenditure was 0.91kJ/g,including crude protein supplied energy of 0.79kJ/g,as the main source of energy.Total amino acids(TAA),essential amino acids(EAA),half essential amino acids(HEAA)and non-essential amino acids(NEAA)showed a trend of increased firstly and then decreased,and the utilization rate was 18.48%,19.08%,16.77% and 18.24%,respectively.Saturated fatty acid(SFA)had little change,and the utilization rate of which was 7.86%,mainly due to the decline of C14:0and C16:0,Monounsaturated fatty acids(MUFA)in general was downtrend,and the utilization rate of which was33.02%,mainly dued to the decline of C20:1(n-7),but the polyunsaturated fatty acids(PUFA)showed an increasing tendency,content increased by 9.35%,mainly due to the content increase of EPA and DHA.In mineral substance,the content of P and Cu in general showed an increasing tendency,the remaining elements content changed little,the rest of the element contents had little change,the utilization rate of Fe and Se was higher,which was 45.16% and 33.33%,respectively,but the content of Ca and Cu in the hatching stage was significantly increased,and the rising proportion was 68.3% and 24.19%,respectively.This study is no
