摘 要:食品伦理学的雏形蕴含在人类的食物习俗之中。一般说来,人类的食物习俗倾向于健康快乐的自然目的,并逐步形成相应的节制德性。当食物习俗和节制德性追求社会目的时,节制德性也就突破自身限制,走向外在食物伦理规范的轨道。在特定历史阶段(主要是中世纪),食物习俗和节制德性转化为神圣食物法则与世俗食物伦理的颉颃。二者的颉颃在农业科技大变革的历史境遇中演进为食品科技对人类伦理精神的挑战和后者对前者的反思。在此进程中,食品伦理学应运而生。食品伦理学既应当为人类健康快乐的个体生活提供理性行为规则,也应当为食品立法提供哲学论证和法理支撑,还能够为应用伦理学开拓出深刻宽广的研究领地。The prototype of food ethics lies in the food custom of human beings. Generally speaking, the food custom tends towards healthy and happy purpose and gradually evolves into the morality of moderation. When food custom and morality of moderation pursue the social purpose, morality of moderation breaks through self-limitations and goes towards the track of the outside food ethics. In the particular historical period mainly the Middle Ages, food custom and morality of moderation fall into the confrontation between holy food rule and worldly food ethics. In the historical context of agricultural science and technology, the confrontation between them evolved into the challenges which food technology posed to human ethics as well as the reflection of the latter towards the former. In this process, food ethics come into being, which should provide rational behavior rules for the happy and healthy individual life as well as the philosophical argumentation and legal support of food legislation, and also open up large research field of applied ethics.
