摘 要:为了解安徽省淮北及黄淮麦区的小麦加工品质,以52个安徽省小麦产业体系展示品种为材料,分析了供试小麦品种HMW-GS的组成和分布、谷蛋白聚合体(GMP)含量、小麦蛋白质含量、Zeleny沉降值及湿面筋含量。结果表明,52个供试小麦品种的HMW-GS变异类型众多,共发现13种变异类型,包含6种优质亚基类型;共出现了21种HMW-GS组合。按照GMP、蛋白质、湿面筋含量及Zeleny沉降值可将52个供试品种分为4类。供试品种的品质评分介于4~10分之间,平均7.4分。基因位点Glu-A1含有1亚基的品种,GMP含量高于含有Null亚基的品种。The processing quality of wheat is closely related to high molecular weight glutenin subunit (HMW-GS). In order to improve wheat processing quality in the north along Huaihe river in Anhui province and Huang-Huai area, 52 wheat varieties, which were provided by the wheat industrial and technological system in Anhui province,were selected as materials to analyze the diversity of HMW- GS,determine the gluten polymers(GMP) content,and analyze the contents of wheat protein and wet gluten as well as the Zeleny sedimentation value. The results showed that the variations of HMW-GS in these wheat varieties were rich, and 13 types of variations were found,including six subunits related to good quality. There were 21 HMW-GS compositions. 52 varieties were clussified to 4 type accord- ing to content of GMP,protein,wet gluten and Zeleny value. According to the quality scoring method by Payne,the score ranked from 4 to 10,with the average of 7.4. And the GMP content of varieties containing Glu-Al alleles was higher than that of the Null allele.
