摘　　要：文章首次以丝绸之路上的重镇——吐鲁番所出十六国隋唐时期的汉文文书为史料,深入考察了古代丝绸之路的饮食文化,特别研究了以"酒"为代表的饮品种类、用途和管理,同时澄清了一些聚讼纷纭的学术疑云。Based on the documents unearthed in Turpan, an import town along the Silk Road, which dated from the period of the Sixteen-kingdom, Sui and Tang dynasties, this paper explores the culinary culture along the ancient Silk Road with the focus on alcoholic drinks. Their classification, usage and management are clari-fied together with academic mysteries.
