摘  要:叶绿酸-Fe^(2+)是一种卟啉配合物,类似血红素铁。利用摩尔比法和等摩尔连续变化法测定了甲醇介质中该配合物的配位摩尔比及稳定常数,即:n_(pheo):n_(Fe)为1:1、K_稳为3.8763×10~6,是较稳定的黑绿色化合物。制备了叶绿酸-Fe^(2+)功能性糖果,每颗5 g质量的糖果中叶绿酸-Fe^(2+)为0.0050 g,含Fe^(2+)4.4 mg。测定了叶绿酸-Fe^(2+)在糖果中稳定性以及模拟人体的吸收,结果表明:叶绿酸-Fe^(2+)在糖果中一个月后仍无颜色变化,稳定存在。胃中仅能溶解出1.33%铁,叶绿酸-Fe^(2+)可以到达近端小肠而被人体吸收,是一种绿色健康的补铁产品,应用于食品添加剂以及药物。Chlorophyllin-Fe^2+ is a complexes of porphyrin, which is similar to heme iron. The mole ratio and stability constant had been determined in methyl alcohol, which used of molar ratio method and method of continuous variations, npheo:nFe was 1:1, K~ was 3.8763~106, chlorophyllin-Fe^2+ was a more stable dark green compound. Chlorophyllin-Fe2~ functional candy was prepared, The optimum adding quantity of chlorophyllin-Fe^2+ was 0.0050g in every candy 5 g, the candy's content of Fe^2+ was 4.4 mg. The stability of chlorophyllin-Fe^2+ in candy were determinated, and simulated the absorption of human body, the results showed that chlorophyllin-Fe^2+ hadn't change of color a month later in candy, which was stable. The stomach could dissolve iron of 1.33%, chlorophyllin-Fe^2+. could reach the proximal small intestine and absorbed by the body. It was a kind of green healthy products, which could supplement iron. It could applied in food additives and medicine.
