摘　　要：奶公犊牛出生体重大,饲料报酬高,利用其生产味道鲜美、营养价值极高的高端小白牛肉是一项朝阳产业。现介绍奶公犊牛生产小白牛肉的国内外应用现状以及生产过程的关键技术,主要包括奶公犊牛的正确选择、规范饲养、科学管理、出栏肥育性能评定等,表明了利用奶公犊牛生产高端小白牛肉已成主要趋势。dairy bull calves are high birth weight and feed rate,It is a sunrise industry producing delicious taste and high nutritional value white beef using dairy bull calves.This article introduces the application status of calves production of white beef at home and abroad,and key technologys of production process include dairy bull calves selected、normative feeding、scientific management、evaluation of fattening performance,It indicates that has become the main trend the production of high-end white beef with dairy bull calves.
