摘  要:目的总结食品中蛋白质测定新老国标方法的区别,有助于实验室人员更加熟悉掌握方法的变动;同时对新的国标方法提出意见和建议,利于标准方法的逐步完善。方法仔细对照新老国标方法内容的变化,列出改动的细节,并根据工作经验和工作实际,找出新国标方法可能需要补充和改进的不足之处。结果新版国标方法不但增加了新的测定方法,对原有方法的原理、试剂、测定过程、结果计算等方面的细节进行了完善与改动。结论食品中蛋白质测定新国标方法的文字表述更准确、详细,测定过程更加合理,结果计算更符合实际,但部分内容仍有待完善。Objective In order to help laboratory staff to grasp the new national standard method for determinaiton of protein in foods, we concluded the differences between the new and the old methods. And meanwhile in order to make the national standard method more perfect gradually, we gave out several proposals aiming at the new method. Methods Through reading and comparing the contents of the new and the old methods carefully, we found and listed the varied details, and simultaneously, we tried to look for possible shortcomings to be completed out of responsiblity as an analyzer. Results A lot of items were revised including principle, reagent, testing process, result calculation etc., and a third method was added in the new national standard method. Conclusions Comparing with the old one, the new national standard method for determinaiton of protein in foods was more reasonable, accurate, and realistic, logical, but some parts of it also needed to be developed.
