摘　　要：在科学技术的带动作用下,近红外光谱在食品检测行业中的作用越来越突出。该技术应用效率高,可实现在线检测以及无损检测等,因此在肉及肉制品品质分析中得到了广泛应用。Under the leading role of science and technology development, the role of near infrared spectroscopy in food detection industry more and more prominent. This technology has high efficiency and realize the online detection and non-destructive inspection so that it has been widely used in the analysis of meat and meat products quality.
