摘 要:建立了植物油中37种脂肪酸组成及含量的气相色谱-质谱联用(GC-Ms)的检测方法。样品经甲脂化衍生后,以HP-88毛细管柱[100m×0.25mm×0.2.0μm]、程序升温、分流进样,在EI离子源、四级杆质量扫描范围为m/z40amu-500amu的条件下,植物油油脂中37种脂肪酸成分在43min以内得到了较好的分离,不存在拖尾峰和前伸峰。利用质谱数据通过仪器软件和NIST谱库自动对脂肪酸甲酯进行定性,面积归一化法定量。该方法简便、快速、准确、可靠。亚麻油中棕榈酸、硬脂酸、油酸、亚油酸和α-亚麻酸6次测量结果的变异系数均小于2.00%。将本方法应用于市售样品分析,结果证明这些食用植物油完全符合相关的国家标准。GC-MS method for qualitative, quantitative analysis of fatty acids in plant oils was developed. The results demonstrated that under the set conditions(column HP-88/100m×0.25mm×0.2.0μm temperature programming, split sampling and scanning range of Elion source) symmetrical peaks and good separation of 37 fatty acid methyl esters were obtained in 43 min. The mass spectrums of fatty acids can be automatically identified by using NIST Database Quantification was achieved by normalization method. The results showed that the method is sensitive, accurate and reliable. In fiaxseed oil determinations(n=6), the coefficients of variation of palmic acid, stearic acid, oleinic acid, linolic acid and u-linolenic acid are all less than 2.00%. The contents of fatty acids in the commercial plant oils, determined by the method testified that all of them are full complied with relevant national standards
