摘  要:为全面了解云南地方猪种的肌肉氨基酸组成以生产优质猪肉,测定并比较了大河猪、丽江猪、迪庆藏猪、滇南小耳猪、撒坝猪及长白猪的肌肉氨基酸组成。结果表明,6个猪种肌肉中均以谷氨酸含量最高,蛋氨酸+胱氨酸是第一限制性氨基酸;大河猪、迪庆藏猪、滇南小耳猪、丽江猪、撒坝猪的氨基酸总量分别比长白猪高32.87%(P<0.05)、36.31%(P<0.05)、17.39%(P<0.05)、22.48%(P<0.05)、14.27%(P<0.05),必需氨基酸分别比长白猪高31.84%(P<0.05)、38.64%(P<0.05)、13.06%(P>0.05)、18.91%(P<0.05)、18.37%(P<0.05),风味氨基酸分别比长白猪高36.30%(P<0.05)、33.78%(P<0.05)、23.19%(P<0.05)、29.92%(P<0.05)、8.07%(P>0.05),氨基酸比值系数分分别比长白猪高81.04%、35.02%、73.36%、84.14%、29.80%。表明云南地方猪种肌肉氨基酸含量较高、必需氨基酸组成和比例更接近人体需要,肉味香浓,营养价值和食用品质均优于长白猪。In order to system atically investigate muscle amino acid component of Yunnan local pig breeds for produce high quality meat, we compared this index among Dahe, Lijiang, Diqing Tibetan, Diannanxiaoer, Saba and Landrace pig. The results showed that glutamate content of meat was the highest among six pig breeds, "methionine+cystine" was the firstly limited amino acid, the total AA, essential AA and flavor AA were higher in Dahe, Diqing Tibetan, Diannanxiaoer, Lijiang and Saba pig than those of Landrace pig respectively by 32.87%(P〈0.05), 36.31%(P〈0.05), 17.39%(P〈0.05), 22.48%(P〈0.05), 14.27%(P〈0.05); 31.84% (P〈 0.05), 38.64%(P〈0.05), 13.06%(P〉0.05), 18.91%(P〈0.05), 18.37%(P〈0.05); 36.30%(P〈0.05), 33.78%(P〈0.05), 23.19%(P〈0.05), 29.92%(P〈0.05), 8.07%(P〉0.05). The score on ratio coefficient of amino acid in these five breeds was higher than Landrace respectively by 81.04%, 35.02%, 73.36%, 84.14% and 29.80%. Conclusively, Yunnan local pig breeds possessed the relatively high level of amino acid, and their essential AA components were close to the needs of human body, which meat was more delicious, nutritious and higher quality than that of Landrace pig.
