摘  要:【目的】本实验对采自新疆乌鲁木齐市沙依巴克区不同鲜奶店的7份零售生鲜奶及3份袋装杀菌奶样品进行微生物安全性检测分析。【方法】菌落总数测定(参考GB4789.2—2010)、大肠菌群计数(参照GB4789.3—2010)、金黄色葡萄球菌的检验(参照GB4789.10—2010)。【结果】3份袋装杀菌奶的菌落总数符合食品安全国家标准,零售生鲜奶3、4号奶样的菌落总数不符合生乳国标,零售生鲜奶和袋装奶之间有显著性差异(P<0.05)。3份袋装杀菌奶的大肠菌群符合食品安全国家标准,生鲜奶大肠菌群平均值300 cfu/mL,是巴氏杀菌奶的69倍。3份袋装杀菌奶未检出金黄色葡萄球菌,每份零售生鲜奶存在的金黄色葡萄球菌数>10~4 mL^(-1),存在潜在危险,1~5和6、7奶样之间有显著性差异(P<0.05)。【结论】袋装杀菌奶的菌落总数、大肠菌群数量均在国家限定标准范围内,未检出金黄色葡萄球菌。而零售生鲜奶的菌落总数大部分在国家限定标准范围内,部分不符合国标。零售生鲜奶大肠菌群数量高,并且存在金黄色葡萄球菌,表明生鲜奶的卫生质量较差,质量存在安全隐患。【Objective】 This experiment detected and analyzed the microbiological safety based on the samples of retail raw milk and 3 bags of pasteurized milk from 7 milk shops in Saybagh Street,Urumqi.【method】Determination of the total number of colonies(Refer to GB4789.3-2010),Determination of the coliform(Refere to GB4789.3—2010),determination of Staphylococcus aureus(refer to GB4789.10-2010).【Results】total number bacteria count in 3 bags of pasteurized milk conforms to the national food safety standards.3,the total number bacterial count in No.4 milk samples fail to meet the national qualified standard range.,There are significant difference between samples of raw milk and pasteurized milk(P 〈0.05).3 bags of pasteurized milk is in line with the national food safety standards.The average value of Raw milk coliform group is 300 cfu/ml,69 times more than pasteurized milk,but there is no national standard for raw milk coliform.3 bags of pasteurized milk is detected with no staphylococcus aureus.The number of staphylococcus aureus of each milk 〉10^4 ml^-1,there is a potential risk of samples.There is significant difference between 1-5 and 7,6 milk samples(P〈0.05).【conclusion】 The total number of colonies and coliform in pasteurized milk are restricted within the range specified by the national standard,staphylococcus aureus is not detected out.And the total number of colonies in most retail raw milk is within the scope of the national qualified standard,and some fails.The number of raw milk coliform bacteria is high,and the presence of staphylococcus aureus indicates poor quality and that some problems and danger exist in the quality.
