摘 要:为更好了解及利用斑嘴野鸭鸭品种优良遗传资源,本研究随机抽取22枚鸭蛋进行测定。通过干燥法、索氏脂肪提取法和凯氏定氮法等相关方法,对斑嘴野鸭鸭蛋的蛋形指数、水分、粗脂肪、粗蛋白、粗灰分和氨基酸等6项指标进行测定。结果表明,斑嘴野鸭蛋形指数为1.40,蛋重均匀而整齐度差异较大,蛋中水分、粗蛋白、粗灰分和粗脂肪含量分别为70.91%、13.17%、4.55%和11.94%。含人体所必需氨基酸质量之和占总氨基酸质量的比为41.85%,营养价值非常高;不饱和脂肪酸油酸的含量为54.08%,有很好的保健功能。通过对斑嘴野鸭的蛋品质及其营养成分的分析与研究,为更好衡量家禽产蛋性能,选育优良斑嘴野鸭品种提供依据。To better study and use the excellent genetic resources of spot-billed ducks, 22 duck eggs were selected randomly to be detected in this study. The egg shape index, moisture, crude fat, crude protein, crude ash, and amino acids these six indicators of egg were measured by drying method, Soxhlet extractor method, and Kjeldahl method. The results showed that the egg shape index of spot-billed duck was 1.40, with even weight but great difference in uniformity, and the content of water, crude protein, crude fat and crude ash in the egg were 70.91%, 13.17%, 4.55% and 11.94% respectively. What's more, the ratio of the essential amino acids in human body and total amino acid in the egg was of 41.85%, which indicated that the nutritional value of the egg was very high; the content of unsaturated fatty acids oleic acid was 54.08%, suggesting that the egg had good health care function. In conclusion, the analysis and study of the quality and nutrients of spot-billed duck egg could better measure the performance of poultry and provide reference for the selection of excellent spot-billed duck breed.
