摘  要:目的分析中国居民主要膳食维生素的摄入状况。方法本文数据来自2010~2012年中国居民营养与健康状况监测中连续3 d 24 h膳食回顾调查。采用多阶段分层与人口成比例的整群随机抽样方法进行抽样,研究对象为中国内地31个省份150个监测点18岁及以上居民,调查总人数为64038人。不同人群平均维生素摄入量及摄入充足率采用2009年国家统计局公布的人口数据,经过复杂抽样加权处理。结果中国居民膳食来源的维生素摄入量为:视黄醇当量441.9μg,视黄醇活性当量为291.5μg;维生素E为35.7 mg,其中α维生素E为8.5 mg;硫胺素为0.9 mg;核黄素为0.8 mg;烟酸为14.3 mg,烟酸当量为21.0 mg;抗坏血酸为80.1 mg;叶酸摄入量为180.9μg。我国居民总体膳食维生素充足率为32%,烟酸的充足率最高为79.3%,叶酸的充足率最低仅为9.0%。结论中国居民膳食维生素摄入不足问题普遍存在,至少有2/3的人群存在膳食维生素摄入不足。应通过营养教育、营养强化等干预措施以提高膳食维生素的摄入水平。Objective To analyze dietary intake of vitamins from foods in Chinese populations. Methods Data were collected from 2010-2012 China National Nutrition and Health Surveillance. Information on fruits and vegetables consumption was collected using the 24h recall method for 3consecutive days. Using the multi-stage stratified cluster randomization sampling method, 64038 subjects from 150 counties' of 31 provinces in China were recruited. Age and sex standardization was performed based on the China 2009 population results published. Results Meanintakes of retinal equivalent and activity equivalent 441.9μg and 291.5μg respectively. Mean intakes of vitamin E and α-toeopherol were 35.7mg and 8.5rag respectively. Mean intakes of niacin and niacin equivalents were 14.3mg and 21.0mg respectively. Mean intakes of thiamin, riboflavin, ascorbic acid and folie acid were 0.9mg, 0.Smg, 80.1mg and 180.9μg respectively. Mean probability of adequacy (PA) was 32%, Highest PA among six vitamins was niacin (79.3%). PA of folic acid was thelowest, only 9.0%. Conclusion Dietary intake of vitamins was inadequacy in Chinese populations. At least 2/3 populations were at risk of vitamin inadequacy. Nutrition education and nutritional fortification should focus on supplying vitamin-rich foods to improve vitamins intake in Chinese populations.
