摘  要:目的了解济宁市市售辣条中重金属铅的含量,评估其污染状况,为保障食品安全提供科学依据。方法对济宁市市售辣条随机抽取50份样本,采用微波消解法处理样品,石墨炉原子吸收分光光度法测定样品中铅的含量,并对消解试剂和基体改进剂进行了选择和优化。结果在优化实验条件下,吸光度与浓度呈良好的线性关系(r=0.994),加标回收率为92.26%~97.41%,相对标准偏差(RSD)为3.54%,用该方法检测样品,重金属铅均有检出,检出率为100%。检测结果参照GB 2762—2012《食品中污染物限量》中规定的豆类制品铅的含量应≤0.5 mg/kg,50份检测样品的总合格率为88%。结论该方法样品处理效率高、简单、快速、准确,可用于辣条中铅的测定。辣条样品中铅都有检出,说明有不同程度的积累,由于铅在体内具有蓄积性,相关部门应引起足够的重视。Objective To understand the heavy metal lead contamination in spicy gluten sticks in Ji'ning, to evaluate its pollution status, so as to provide scientific basis for food safety. Methods 50 food samples were randomly selected from supermarkets, farmers' markets and small shops around school. The sample was digested with microwave and conducted for the determination of lead by atomic absorption spectrometry. Digestion reagent and matrix modifier were selected and optimized. Results There was good linear relationship between the concentration and absorbanee ( r = 0. 994) ; the recovery rate was within 92.26% -97.41% and the relative standard deviation(RSD) was 3.54%. The detectable rate of lead was 100% with this method. The total qualified rate of 50 samples was 88% according to the standard which should be no more than 0. 5 mg/kg in GB 2762-2012 Limits of Contaminants in Food. Conclusion The method is proved to be simple, rapid, accurate and suitable for determination of lead in spicy gluten sticks. Lead was detected in all samples. It shows that there are different levels of accu- mulation. So enough attention should be paid by relevant departments because of the high accumulation in the body.
