摘  要:为研究饲粮不同粗蛋白质水平对湘沙猪配套系母系猪肉质的影响,试验选择生长发育正常、体重35 kg左右的湘沙猪配套系母系猪48头,随机分成4组,每组2个重复,每个重复6头猪。试验分前期(体重为35~65 kg)和后期(体重65~90 kg)两个阶段。试验前期饲粮粗蛋白质水平分别为14.03%、14.53%、15.03%、15.53%,试验后期饲粮粗蛋白质水平分别为13.03%、13.53%、14.03%、14.53%。试验期104 d。饲养试验结束后每组选3头猪(1公2母)进行屠宰测定。结果表明,饲粮不同粗蛋白质水平对湘沙猪配套系母系猪的L、a、b、熟肉率、贮存损失、失水率、肉色、大理石纹等肉品质及干物质、粗蛋白质、粗脂肪、粗灰分等肌肉成分指标无显著影响;前期饲喂粗蛋白质水平14.53%的饲粮、后期饲喂粗蛋白质水平13.53%的饲粮,湘沙猪配套系母系猪背最长肌中丝氨酸、丙氨酸、亮氨酸、脯氨酸、甘氨酸、缬氨酸、风味氨基酸显著提高,硬脂酸、花生酸显著降低,而亚油酸、γ-亚麻酸、二高-γ-亚麻酸、花生四烯酸、多不饱和脂肪酸显著提高,同时矿物元素锌含量显著提高。说明饲粮不同粗蛋白质水平对湘沙猪配套系母系猪肉品质有影响,而中等粗蛋白质水平的饲粮(粗蛋白质水平前期为14.53%、后期13.53%)可获得较好的肉品质。In order to study the effects of different dietary protein levels on meat quality of Xiangsha synthetic female line pigs. The test selected forty-eight Xiangsha synthetic female line pigs with normal growth and an initial body weight of 35 kg, which were randomly divided into four groups with two replicates per group and six pigs per replicate.The dietary protein levels were 14.03%, 14.53%, 15.03%, 15.53% in the earlier stage and 13.03%, 13.53%, 14.03%, 14.53% in the later stage,respectively during in the earlier period (35-65 kg body weight) and in the later period (65-90 kg body weight). The test lasted 104 days. Three pigs of each group(1 male, 2 female) were slaughtered after finishing test. The results showed as follows: no significant difference was seen among the four groups in the ratio of cooked meat, storage losses, dehydrating rate, L, a, b value. Color grade, marble and so on meat quality, no significant difference was seen among the four groups the muscle chemical composition of DM, CP, EE, Ash. When the dietary with 14.53%, 13.53% crude protein in the earlier and later periods, the contents of Ser, Ala, Leu, Pro, Gly, Val, FAA of Xiangsha dorsi significantly increased, C18:0 and C20:0 significantly decreased, and the polyunsaturated fatty acids (PUFA) significantly increased, w synthetic female line pigs in longissimus but C18:2, C18:3n6, C20:3n6, C20:4n6 hat is more, the mineral element of Zn significantly increased. Comprehensive analysis, significant difference was seen among the different dietary protein levels on meat quality of Xiangsha synthetic female line pigs. The medium protein dietary (the dietary with 14.53%, 13.53% crude protein in the earlier and later periods) can obtain better meat quality.
