摘 要:试验旨在对雉鸡和AA肉鸡肉品质指标和肠道氨基酸转运载体进行比较研究,为探讨二者在肉质评定及中性和碱性氨基酸的吸收利用的差异因素上提供参考。选择饲喂相同试验饲料的18周龄雉鸡和8周龄AA肉鸡各36只,分别随机分为3个重复,每个重复12只,测定并比较肉品质及肠道氨基酸转运载体mRNA表达量。结果表明,雉鸡胸肌和腿肌的肉色值都显著高于AA肉鸡(P<0.05);雉鸡胸肌和腿肌的滴水损失率都显著低于AA肉鸡(P<0.05);雉鸡胸肌的剪切力极显著高于AA肉鸡(P<0.01),腿肌的剪切力显著高于AA肉鸡(P<0.05)。雉鸡十二指肠b^(0,+)AT和SAT2的mRNA表达量极显著高于AA肉鸡(P<0.01),ATB^(0,+)的mRNA表达量显著高于AA肉鸡(P<0.05);雉鸡十二指肠b^(0,+)AT和SAT2的mRNA表达量极显著高于AA肉鸡(P<0.01),ATB^(0,+)的mRNA表达量显著高于AA肉鸡(P<0.05);雉鸡空回肠CAT2,CAT3,ATB^(0,+)和y^+LAT1的mRNA表达量极显著高于AA肉鸡(P<0.01);CAT1,SAT2,y^+LAT2的mRNA表达显著高于AA肉鸡(P<0.05),SAT3的mRNA表达量显著低于AA肉鸡(P<0.05)。试验说明雉鸡的肉品质指标中肉色和滴水损失率优于AA肉鸡,嫩度差于AA肉鸡;肠道氨基酸转运载体的转运效率高于AA肉鸡。This experiment was conducted to compare the meat quality and intestinal amino acid transporters of pheasant and AA broiler, which can provide a theoretical basis for studying the differences in the evaluation of meat quality and the absorption and utilization of neutral and basic amino acids. Select 36 18-week-old pheasants and 8-week-old AA broiler respectively which were fed with the same diet and randomly divide them into 3 groups with 12 replicates to measure and compare meat quality and mRNA expression of intestinal amino acid transporters. The results showed that the flesh color of the pheasants were significantly higher than that of the AA broilers(P〈0.05). The drip loss of the pheasants were significantly lower than that of the AA broilers(P〈0.05), The shear force value of pheasant breast muscle were very significantly higher than that of AA broiler (P〈0.01), and that of pheasant leg muscle were significantly higher than that of AA breiler(P〈0.05). The mRNA expression of b^0,+AT and SAT2 in duodenum of pheasants were very significantly higher than that in AA broilers (P〈0.01), and of ATB^0,+ were significantly higher than that in AA broilers (P〈0.05). The mRNA expression of CAT2, CAT3, ATB^0,+ and y^+LAT1 in jejuno-ileum of pheasants were very significantly higher than that in AA broilers (P〈0.01), and of CAT1, SAT2 and y+LA~ were significantly higher than that of AA broilers (P〈0.05), but of SAT3 were significantly lower than that in AA broilers (P〈0.05). These results indicated that the flesh color and drip loss of pheasant were better than that of AA broiler, but the tenderness of meat were worse than that of AA broiler. The transportation of intestinal amino acid transporter of pheasants were more efficient than AA broiler.
