摘  要:研究热处理对脱氧雪腐镰刀菌烯醇(deoxynivalenol,DON)和T-2毒素的去除作用。测试不同温度、不同加热时间、不同pH值条件下热处理对DON和T-2毒素影响,采用高效液相色谱-质谱测定毒素及其衍生物,采用外标法定量。DON在中酸性条件下,121℃加热60 min,DON浓度保持稳定,碱性条件能促进DON的热降解。T-2毒素在中酸性条件下,105℃加热30 min开始降解,121℃处理pH值为7的1.0μg/mL T-2毒素溶液60min,T-2毒素去除率分别为(51.98±3.37)%,碱性条件能促进T-2毒素的热降解。在一定条件下,热处理对DON、T-2毒素具去除作用。The effects of temperature, thermal time and pH value of toxin solutions on the removal of deoxyni-valenol (DON) and T-2 toxin by thermal treatment were investigated. The concentration of toxins and their derivatives were analyzed by HPLC-MS/MS and quantified by external standard method. DON remained stable at 121℃for 60 min in neutral or acidic condition, but alkaline condition promoted thermal degradation of DON. T-2 toxin was degraded at 105℃for 30 min in neutral or acidic condition, and removal rate of T-2 toxin was (51.98±3.37)% after 60 min of 121 ℃(pH value of toxin solution was 7, and concentration of toxin wase 1.0 μg/mL),and alkaline condition promoted thermal degradation of T-2 toxin.DON and T-2 toxin were re-moved by thermal treatment under certain conditions.
