摘  要:以60℃下干燥至恒重的葡萄皮为原料,以一定体积分数的乙醇溶液为提取溶剂,采用超声波法对葡萄皮花色苷进行了提取研究。运用响应面法设计实验方案,主要考察了提取温度、乙醇体积分数、提取时间和液料比对提取效果的影响,结果表明提取温度为75℃、乙醇体积分数为55%、提取时间为35 min、液料比为30 mL/g时,葡萄皮花色苷提取效果最佳、实验重现性好,对于葡萄皮花色苷的开发利用具有一定的参考价值。The grape skin was dried at 60 ℃ to constant weight as raw materials and a certain volume fraction of ethanol solution as the extraction solvent,the extraction of anthocyanins by ultrasonic method was carried out.The experimental scheme was set up by response surface method.The effects of extraction temperature,ethanol volume fraction,extraction time and ratio of liquid to material on the extraction efficiency were investigated.The results showed that the grape skin anthocyanin extraction efficiency reached the best when the extraction temperature was 75 ℃,the volume fraction of ethanol was 55%,the extraction time was 35 min and the ratio of liquid to material was 30 mL/g.The reproducibility of the experiment was good,which had a certain reference value for the development and utilization of anthocyanins from grape skin.
