摘　　要：雪茄烟叶采摘、调制后需进行发酵处理。综述了堆积发酵法、装箱发酵法、压力发酵法、蒸汽发酵法、糊米发酵法和其他发酵方法的研究进展,并指出几种发酵方法的操作步骤、发酵特点及注意事项,以期为工业上雪茄烟叶发酵提供参考。Cigar tobacoo leaves need to be fermented after being picked and modulated. The research progress of accumulation fermentation, packing fermentation, pressure fermentation, steam fermentation, paste rice fermentation and other fermentation methods were reviewed. And the paper pointed out the operation steps, fermentation characteristics and precautions of several fermentation methods to provide reference for industrial cigar tobacoo leaves fermentation.
