摘  要:目的了解济南铁路局辖区餐饮单位食(饮)具消毒状况,为提高食(饮)具消毒质量、确保广大旅客及铁路职工食品安全提供技术支持。方法采用大肠菌群检验纸片法,对消毒备用的食(饮)具进行采样检测,根据GB 14934-94《食(饮)具消毒卫生标准》进行消毒效果评价。结果 2015~2016年,共监测食(饮)具2 070份,合格1 864份,合格率为90.00%,合格率呈逐年上升趋势,不同年度差异有统计学意义(P<0.01)。一、三季度合格率低于二、四季度,差异有统计学意义(P<0.01)。托幼机构食(饮)具消毒合格率(100.00%)显著高于列车餐车(85.74%)。碗、盘、杯子不同种类食(饮)具消毒效果无差异(P>0.01)。结论济南铁路局辖区餐饮单位食(饮)具消毒合格率效果总体状况良好,应重点加强对春、暑运期间普通长途列车餐车的监督管理,提高食(饮)具消毒合格率,切实保障就餐者饮食安全。Objective To understand the disinfection status of food (drinking) equipment in the restaurants of Jinan railway area,so as to provide technical support for improving the hygienic quality of food(drinking)equipment and ensuring the safety of food for the passengers and railway workers. Methods Coliform bacteria test and paper disk method were used to detect the sterilized food (drinking) equipment,and the disinfection efficacy was evaluated according to the hygienic standard of GB 14934-94. Results A total of 2 070 food (drinking) equipments were sampled from 2015 to 2016,the qualification rate was 90.00%(1 864/2 070).The qualification rate was increasing year by year and the difference was statistically significant in different years(P〈 0.01).The qualification rates of the first and third quarters was lower than that of the second and fourth quarters,the difference was statistically significant(P〈 0.01).The qualification rate of childcare facilities was significantly higher than that of train diners.The qualification rate of the different kinds of food (drinking) equipment was not statistically different(P〈 0.01). Conclusion The qualification rate of food (drinking) equipment in Jinan railway area is generally good.The hygienic supervision and management of dining cars in the ordinary long-distance trains during the spring and summer should be strengthened,so as to improve the qualification rate of food (drinking) equipment and ensure the food safety of diners.
