摘 要:采用电感耦合等离子体质谱法(Inductively Coupled Plasma Mass Spectrometry,ICP-MS)测定了漳州市碱面及其原料(面粉、水、碱和盐)的硼含量,为碱面质量安全监测提供本底判断依据。结果表明,总计381份面粉、水、大树碱、盐和碱面样品均检出了硼,最终碱面的硼本底值在0.02~0.732mg/kg之间,平均值为0.300mg/kg,呈正态分布。95%概率条件下的置信区间为0.250~0.349mg/kg,置信区间最大值为0.349mg/kg,该数值可作为漳州地区碱面的硼元素本底值参考。Boron background values in yellow alkaline noodles and its ingredients(wheat flour,water, alkali and salt) in Zhangzhou City were determined by ICP-MS method. An accordance of background value was provided for aquatic products quality and safety testing. A total of 381 wheat flour, water, alkali, salt and yellow alkaline noodle samples contained boron. The average background value of boron in these yellow alkaline noodle samples was 0.300 mg/kg and the variation range was 0.026 ~ 0.732 mg/kg, following normal distribution. The 95% confidence interval for the yellow alkaline noodle samples was 0.250-0.349 mg/kg, whereas the maximum confidence value was 0.349 mg/kg. Accordingly the data obtained in this study can be seen as background values of boron element in yellow alkaline noodle samples in Zhangzhou City.
