摘　　要：在生猪宰后检疫中,准确迅速地鉴别出色泽异常肉,是肉品卫生质量监督检验的一项重要工作。阐述几种异常肉的概念,分析了这5种肉的发病原因,病理变化及宰后处理,对检疫人员来说是非常重要的。现就色泽异常肉的鉴别和处理进行阐述,以供大家参考。It is important for the supervision and inspection of accurately and rapidly identify abnormal meats in the quaran tine of pig post slaughter. This paper describes the concepts of some abnormal meat and analyzes the causes pathological chan ges and slaughter post processing of 5 kinds of meats.
