摘 要:为了解江达牦牛的产肉性能及其肉品质性状,试验随机选取10头(公母各半)成年健康的江达牦牛进行屠宰试验及其肉品质分析研究。结果表明:江达牦牛公牛屠宰率为51.00%,净肉率为44.14%,胴体产肉率为86.54%,骨肉比为1∶6.43,眼肌面积为(40.90±9.57)cm^2;江达牦牛母牛屠宰率为49.02%,净肉率为42.72%,胴体产肉率为87.13%,骨肉比为1∶6.77,眼肌面积为(31.62±4.98)cm^2。江达牦牛肉富含硒、铁、维生素E,牛磺酸含量丰富,不饱和脂肪酸含量较高,ω-6/ω-3比值较佳。说明江达牦牛具有较好的产肉性能,江达牦牛肉具有高蛋白的特点,氨基酸总量高,符合理想模式,属于优质动物蛋白,具有较好的加工性能。In order to study meat production and quality properties of Jiangda yak, ten healthy yaks ( half male and half female) were randomly se- lected in this experiment for slaughter and the measurement on quality properties. The results showed that dressing percentage, net meat percent- age,carcass production rate, bone - meat ratio and eye muscle area of male Jiangda yak were 51.00% ,44. 14% ,86.54% , 1:6.43 and ( 40.90 ± 9.57 ) cm2, respectively ; and those factors of female Jiangda yak were 49.02 % ,42.72 % , 87.13 %, 1:6.77 and ( 31.62 ± 4.98 ) cm2 each. The meat of Jiangda yak was rich in mineral elements Se, Fe, vitamin E and taurine, and was in higher content of unsaturaled fatty acids, and in comparatively appropriate ratio of ω - 6/ω - 3. The results indicated that Jiangda yak could have better meat performance and high a- mounts of proteins and amino acids, which were conformed to be the desired pattern. The yak meet belonged to high - quality animal protein and owned a better processing property.
