高校食堂物料采购的精细化管理——以淮海工学院为例

摘　　要：根据高校后勤社会化改革的要求,高校食堂经营模式日趋多元化,这就要求高校食堂既要搞好食堂服务保障工作,为教学、科研和师生提供优质的伙食服务;同时也要求食堂进一步加强内部管理,实现采购在质量、成本、服务等方面最优的目标。通过对淮海工学院食堂采购管理现状的分析,对新形势下加强高校食堂物料采购精细化管理工作措施进行了探讨,对高校食堂有效应对市场物价不断上涨和稳定学生饭菜价格等困难和问题提出了应对办法,力求高校食堂稳定运行,实现社会效益和经济效益的同步提升。According to the requirements of the college logistics socialization reform,college canteen management mode has become increasingly diversified,which requires the college canteens to do a good job in the canteen service security work to provide quality food service for teaching,research and teachers and students,and also asks the canteen to further strengthen the internal management,to achieve the best in the quality,cost,service and other aspects.Through the analysis of the status quo of Huaihai Institute of Technology canteen＇s purchase management,this paper discusses the measures to strengthen the fine management of the materials purchase in college canteens under the new situation,and puts forward some countermeasures to solve the difficulties and problems of the college canteen＇s effective response to the rising market price and stabilize the students＇ food prices,so as to realize the stable operation of the college canteens and achieve the simultaneous upgrade of social benefits and economic benefits.
