利用豆芽机萌发黑豆的条件探究

摘　　要：利用豆芽机萌发黑豆芽,实验结果表明:豆芽机萌芽黑豆的最佳条件为:浸泡黑豆温度25°C、浸泡时间20 h,萌芽温度25℃,随着萌发时间的延长黑豆发芽率、发芽指数、活力指数及维生素C含量逐渐增加,72 h后趋于平稳;总黄酮含量在72 h时达到最大值。In this paper, bean sprouts machines were used to germinate black bean. The results showed that the optimum conditions were as follows: soaking black bean at the temperature of 25 °C, soaking for 20 hours and sprouting at the temperature of 25°C. The germination rate, germination index, vigor index and vitamin C content of black beans increased gradually, and became stable after 72 hours. The total flavonoid content reached the maximum at 72 h.
