灵芝的含量和处理温度与椰奶灵芝酒质量的关系

摘　　要：通过对pH值、酒精度、残糖量、甲醇、SO2、干物质和灵芝三萜含量及苦味等指标的测定结果,所有灵芝含量(0、3、7、11 g/kg)处理的各项指标均符合标准,效果由好到差的顺序为7 g/kg>11 g/kg>3 g/kg>0 g/kg;所有温度(20℃、25℃、自然温度)处理的各项指标也都符合标准,效果由好到差的顺序为25℃>20℃>自然温度。其中以灵芝含量7 g/kg处理和温度25℃处理的产品质量为佳。Abstract Based the determination results of pH, alcohol, amount of residual sugar, methanol, SO2, Ganoderma lucidum triterpenoid content, dry matter and the bitter taste, all of the content of G Iucidum （0, 3, 7, 11 g/kg） handle all the indexes accord with standard, from good to bad order for 7 g/kg 〉 11 g/kg 〉 3 g/kg 〉 0 g/kg. All temperature （20 ℃, 25 ~C and natural temperature） to deal with the indicators are up to the standard, from good to bad order of 25 ℃ 〉 20 ℃ 〉 natural temperature, treatment with 7 g/kg of G. lucidum content and temperature 25 ℃ is the best product quality.
