摘  要:近年来,量子点由于其独特的光学性质,在食品安全分析领域引起了广泛的关注和研究。在人们对食品安全快速检测提出越来越高标准的要求下,传统检测方法存在检测时间长、灵敏度不高、样品前处理繁琐以及对样品基质的抗干扰能力不足等缺点,而基于量子点的荧光检测方法能够弥补这些缺点。文章对量子点的基本结构、光学特性、制备与修饰方法,以及量子点在食品安全检测方面取得的新进展进行综述。In recent years, quantum dots have attracted extensive attention in the field of food safety analysis because of their unique photoelectric properties. Especially under the requirements of rapid detection for food safety, the traditional detection method exists some disadvantages, such as requires a long time, low sensitivity, fussy sample pretreatment and the weak sample matrix anti-interference ability. However, the fluoroimmunoassay technology based on quantum dots make up for these shortcomings. In this paper, the basic structure, optical properties, preparation and modification methods of quantum dots were briefly introduced, and the new progress of quantum dots in food safety detection was summarized.
